Raspberries
Raspberries belong to the genus Rubus and
are classified as Rubus idaeus.
Considered
by many the most intensely flavored member of the berry family,
the raspberry is composed of many connecting drupelets (individual
sections of fruit, each with its own seed) surrounding a central
core. Red Raspberries have been cultivated in Europe for over
400 years. In North America, cultivated raspberries originated
from two groups: red raspberries, native to Europe, and wild
red ones native to North America. There are three main varieties
— black, golden and red, the latter being the most widely
available.
The berries contain a fair amount
of iron, potassium and vitamins A and C. One cup of raspberries
has 32% of the dietary fiber our bodies need every day. Raspberries
also are high in vitamin C; one cup contains 40% of the vitamin
C we need in a day.
